Dear George,
Yes, I waited for some time for software to appear that would do that. The
reason my system is on a Mac is because that's the only software I've found
so far that allows postponing finalization of the disk until it is full (or
until you have what you want on it). The disk can be recorded in multiple
sessions without suffering the overhead of finalization (25 Mb). The
downside is that the disk can't be read in a normal CD drive until it has
been finalized. Of course, you can always read the already recorded data on
the CD-R drive. Undoubtedly someone will soon (or maybe already has and I
just haven't found it) offer similar software for other platforms.
