Hi Roger,

For fixed-value capacitors, you should look to ATC (American Technical
Ceramics), Inc. They sell a wide variety of non-magnetic capacitors, which
have been the staple of probe builders for years. They sell development
kits, with several capacitance values, which are invaluable in probe design
and development. Find them at http://www.atceramics.com .

For variable capacitors, you have several choices. A favorite of many is
Voltronics, Inc. Look at
http://www.voltronicscorp.com/Non_Magnetic/intro.html

For higher power applications, we solids people have relied upon Polyflon
capacitors for years. They are bulky, but they can handle quite a bit of
power. http://www.polyflon.com .

I can't remember the manufacturer of the large vacuum capacitors that we
used to use for really high-power applications, but I can dig that info. up
if you wish.

Gee, in the old days I had to dig though piles of catalogs. Now, it's much
easier <grin>.
